Our oven is still on strike and I have to be more inventive when I want something sweet but healthy to munch on….
Here is what I ended up making, I find it healthy and very filling.
NO BAKE CARROT BALLS
1/3 cup almond slices
1/2 cup dried plums (prunes)
1 cup grated carrots
1/2 cup rolled oats
1/3 cup coconut flakes
1 teaspoon ground cinnamon
First grate the carrots and set them aside.
Put the almonds and the prunes into a food processor and process until a sticky mixture forms. Add grated carrots, rolled oats, the coconut flakes and the cinnamon, and process until it all sticks together.
Form about 12-15 balls depending on the size you want. You can use either your hands or ice-cream scoop. I put them in the fridge for an hour and then packaged them up by 3, in a zip lock bag.
