So, with all the obstacles in my way yesterday, I gathered all my patience and still edited my video, although the editing program was giving me a middle finger. This is pretty much edited blindly 🙂 So here we go….
Zucchini bread sticks recipe with comments
Preheat oven 425 F
2 zucchinis, grated (I used small ones but I suggest medium or large)
1 1/2 cup cheese, either cheddar or mozzarella, they both work
3/4 cup Parmesan cheese
1 cup cornstarch
2 tsp grated garlic
1 or 2 eggs Depending on the size of your zucchinis, use either 1 or 2 eggs. I used small zucchinis and my mixture came a little bit wet with 2 eggs, so start with one egg and if needed add another one
Italian seasoning, salt, pepper
Grate your zucchini, your choice of cheese and garlic. Gather rest of the ingredients and mix everything together. Don´t use all the grated cheese, leave couple tablespoonfuls to sprinkle on top later.
Transfer everything into a baking pan, spread your mixture and put into the oven for 25 minutes. Take out after 25 minutes, sprinkle some leftover cheese on top and put back in the oven for 5 or 10 minutes.
Cut into strips and serve with whatever dip you have. I made an avocado – tomato dip. But it was awesome without it as well.
