I feel so Christmassy today! I woke up very early with the feeling that I want to bake. I guess the contributing factor to this would be the fact that I bought a new bundt baking pan yesterday. It´s fabulous!
So here is the 2nd advent cake. Also it´s the day we brought our Xmas tree home 😉
Preheat oven 350 F
Ingredients
200g butter
¾ cup sugar *if you love very sweet, make it 1 cup
2 tsp vanilla extract
1/2 tsp salt
4 eggs
1 ½ cup + 2 tbsp whole wheat flour
1tsp baking powder
1tsp baking soda
250g sour cream
2 tbsp cocoa powder
½ cup cherries + a bit of slivered almonds
Bring the butter to a room temperature and add it to the stand mixer bowl with the sugar. Mix it until slightly fluffy. Add vanilla extract, salt and then the eggs one by one.
Add whole wheat flour, baking powder and baking soda. Mix slowly. Finally add sour cream.
Take out 1/3 of the batter and put it in another bowl. Mix in the cocoa powder and the cherries.
Grease the bundt pan and sprinkle some flour in it, I also added some slivered almonds. Pour half of the white mix in the pan, then layer the cocoa mixture on top, then the white batter again. Use a chopstick to create a little swirl in it.
Put in the preheated oven at 350 F for 60 min. Take out and cover with your favourite icing.
Serve and enjoy!
