No Bake Chocolate Pretzel Peanut Butter Squares

Recipe courtesy of Trisha Yearwood, who is an amazing country singer, actress, she has released cookbooks, she has a cooking show…. such a powerful woman. I originally found this recipe on Facebook with her name included. I did not know who she was which is unfortunate because I love country music and cooking. I don’t know how I missed that but now I’m a definite follower and will try more of her recipes. I´m very excited!

Here is the first recipe that introduced me to Trisha. I only used half of this recipe, added a little bit of cinnamon to the chocolate and used dark chocolate instead of milk chicolate, but I will post the original here, don´t want to mess with perfection 🙂  I only used half because we are not big on dessert. Although for the last couple of weeks I have this unusual craving for dark chocolate and sweets. I can´t explain it! It’s almost paranormal 🙂

Ingredients

1 1/2 sticks (12 tablespoons) butter, melted
2 cups pretzels, crushed into crumbs
1 1/2 cups confectioners’ sugar
1 cup plus 1/4 cup smooth peanut butter (I love the crunchy one)
1 1/2 cups milk chocolate chips (I used dark chocolate chips)

In a medium bowl, add the melted butter, pretzel crumbs, confectioners’ sugar and 1 cup of the peanut butter and stir together until well combined. Press the mixture evenly into the bottom of an ungreased 9-by-13-by-2-inch baking dish. (I used 8×8 because I only made half of the recipe). Combine the chocolate chips and the remaining 1/4 cup peanut butter in a microwave-safe bowl. I also added a pinch of cinnamon. Microwave in 30-second intervals, stirring in between, until the chocolate and peanut butter are melted and smooth; two intervals should be enough. Mix to blend, then spread over the peanut butter-pretzel layer.

Refrigerate for at least 1 hour before cutting into squares.

I actually couldn’t wait for the recommended hour so the pieces where a little crumbly still but tasted awesome, sweet and salty together. Best dessert in a while!

What I really LOVE about Trisha Yearwood´s cooking is that it is very simple, like “normal” people cook every day. Nothing fancy which I tend to not like 🙂  My kind of cooking!
