Vegetable of the year – BEET

I haven´t always been a fan of beets. I did not like beets while growing up, I don´t think anybody did. I think our love story started few years back. I love beets now.

Beets are high in immune-boosting vitamin C, fiber, and good for healthy nerve and muscle function also good for your bones, liver, kidneys and pancreas. Beets help reduce the risk of birth defects. It all sounds great, doesn’t it.

Beets also lower risk of heart disease, boost eye health, boost endurance, reduce dementia risk and combat constipation.

BUT beets can cause nausea, stomach upset and diarrhea in some people. For example I can´t drink a lot of beet juice at once. “Extreme consumption of table beet root can cause several disturbances,” in healthy patients, the researchers report in the September 2007 issue of “Acta Biologica Hungarica.” Excess consumption needs special attention from patients with hemochromatosis, a genetic disorder that causes excess accumulation of iron in the body. This can lead to damage of the liver and pancreas. But the researchers added that moderate consumption benefits people with iron-deficiency anemia and inflammatory bowel diseases. If you still want to drink beet juice start with the juice of a half medium-sized beetroot once a week and slowly increase to a whole beetroot in a week. Your body needs to adjust to drinking it.

If you’re prone to kidney stones, you might want to eat beet greens with caution. They’re high in oxalates, which can form small crystals and contribute to the development of kidney stones.

Here are my favourite meals with beet in it. I always only use beetroots. I’ve tried beet greens once and I had no interest in trying them again!

  1. Yes, beets take a little getting used to. As a kid, I was introduced to my Polish grandmother’s borscht. It was a staple at Easter time. You’ve shared some nice recipes here. I particularly like the beet lasagna. Take a look at our latest post. It’s a riff on borscht. (Great minds think alike. . .) Gina

  2. The lasagne looks yummy. I just had beet and goat’s cheese pie on Valentine’s Day, it was also really good. I am not a fan of beet though and have never heard of green beets?!

    1. Thank you! Not green beets but green beet leaves 😉 Although they are very good for you, I just didn´t like them 😉 I saw your blog post about Maiasmokk, that´s on my to do list for this summer 😉 Can´t wait!
