Easy but is it good?

Now that I´m gluten/wheat free, egg free, night shade free and occasionally corn free (because there is corn EVERYWHERE) it is harder to get by with “easy” because everything contains these ingredients. I need to make my own bread, my own ketchup, invent new ways of living…BUT there are times when I just do not want to spend half an hour making pancakes and I´m always looking for ways to make my life easier. So yesterday, while shopping for a new fall coat, I came across a gluten free, vegan and organic pancake mix. It said “ready in 5 minutes” . SOLD!

The ingredients listed organic brown rice, organic tapioca flour, organic kaniwa flour, baking powder, salt, xantham gum, baking soda.

I had no idea what kaniwa flour was. I thought that maybe that´s what quinoa flour is called 🙂 Kaniwa is a close relative to quinoa, so I wasn´t completely wrong!. Just like quinoa, this “super grain” is loaded with protein, dietary fiber, and antioxidants, although kaniwa is more nutrient-dense. Kaniwa has a similar sweet nutty flavor as quinoa, but its seeds are half the size of quinoa.

Takes about 7-10 minutes until the pancakes are ready to serve, depends how slow you are in the morning 🙂

Makes 7 small/medium pancakes (about 1/4 cup mixture for 1 pancake)

1 tsp egg replacer powder mixed with 2 tbsp water (if you can have eggs – 1 egg)

1 cup milk ( I used lactose free 2 % milk)

1 cup dry GoGo Quinoa pancake mix

1/4 tsp pure vanilla extract

butter, for frying

In a little cup mix the egg replacer powder with water. Pour 1 cup of milk into the mix.

Add 1 cup of pancake mixture into a medium bowl and mix in the wet ingredients (milk + egg replacer)

Heat pancake pan to medium high heat, add tsp of butter.

When butter is melted and the pan is heated, pour pancake mixture into heated pan. With the first batch I got 3 pancakes and the second 4 pancakes. About 1/4 cup for 1 pancake.

Flip the pancake when bubbles start to show or when the pancake is browned, you can check it buy lifting the edge of a pancake.

Serve it with whatever your heart desires! I went with plain yogurt, maple syrup and strawberries! I found the pancakes a little bitter but overall good. If you are a huge fan of quinoa, you will love these pancakes. They are also very filling and  very high in calories (I think). 1/3 cup of dry mixture is 210 calories. I used 1 cup of dry mixture, that is about 650-670 cal. My usual breakfast is a banana and a bowl of rice Chex-s with jam and plain yogurt.

According to University of Colombia consuming 350 to 500 calories at breakfast is the best. If you eat fewer than 350 calories, you won’t get enough energy to boost your metabolism and to carry you through to the next meal. I guess 3 pancakes fits just between these numbers.
