This is a recipe I put together myself, you could say this is unique 🙂 But I’m sure there is somebody somewhere with the same recipe…I mean it’s a big world out there!
I have never cooked with Chard before so this was an entirely new experience for me. I know how to make patties and what goes in there so it wasn’t very difficult. And I’m very proud of myself of creating a recipe by myself. Gotta find a new reason to be excited and happy every day, right?
So I had my quinoa and chard, my basic ingredients. Garlic of course and spices, salt, a bit of avocado oil. Then I added some cheese and an egg to keep it together. Since it was too liquidy I decided to add bread crumbs as well. This makes 6 patties
1/2 cup quinoa (uncooked)
6 big Swiss Chard leaves
3/4 cup cheddar cheese
1 slice of bread, made 3/4 cup bread crumbs
2-3 garlic gloves
2 teaspoons avocado oil
salt, pepper, spices, oil for frying
Wash the quinoa and cook similar to rice, I used rice cooker, so it was easy. Whether you use a rice cooker or a sauce pan, quinoa to water ratio is 1:2, use 2 cups of water for every cup of quinoa.
Wash Swiss Chard and cut it into small pieces. I used food processor but you can just chop it with a knife if you don´t have one.
When quinoa is ready, let it cool down a bit and add it to the chard mixture. Then add spices, salt, pepper, garlic, avocado oil, cheese, an egg and bread crumbs. Mix it until well combined. If it doesn’t hold together nicely, add another egg.
Form patties one by one and put them into the preheated frying pan. Pan needs to be on medium-high heat setting. It helps to give the patties a hard layer so it’s easy to flip them since they are pretty delicate to handle. I fried them 2-3 minutes each side.These were so good that we finished all of them at once. I was so surprised when Rob asked for more. He is not really a “leafy” kind of a guy 🙂
Also tried this same recipe with couscous, plus added an extra egg, made life a little bit easier.
