Super easy kefir soup

edit-1Kefir or keefir.  I have grown up with it and it is good for your body. It’s also  perfect for people with lactose intolerance, like me.

If you haven´t tasted kefir in your life, it may take a while to get used to. Rob never did so don´t force it 🙂 When I make kefir soup I will have to make it just for me 😉

Why is keefir good for us?

* Kefir is made by fermenting milk with 10 to 20 different types of bacteria and yeasts, where yogurt is usually just fermented with a handful of types; this leads to a higher pro-biotic count in the final product.

* Each 175 gram serving provides about 20 per cent of the daily RDA for calcium, which is important for the health of your bones and teeth.

* Great way to get extra protein in your diet without extra calories. A single serving of plain, non-fat kefir has less than 100 calories, but provides 10.5 grams of protein

* Source of several B vitamins, which are essential for our good health and functioning

* Some research has connected the drink to reduced cholesterol and blood pressure in lab rats.

There are so many different things you can do with kefir, you can make a salty or sweet snack/meal, depending what you add to it – vegetables, black bread or jam and fruits. You can get creative with it! Or just pour a glass of kefir and enjoy it just like milk! I like the natural one but there´s also different flavoured ones.

But here is a soup that I like to make:

Cut all your favourite vegetables, I used tomatoes, cucumber, olives and avocado. Pour some keefir into the bowl, add the veggies, little bit of salt (if you like spicy, add some spices as well) and voila – the soup is done 🙂

edit-2It’s especially good on a hot summer day or a morning after when you had too much to drink 🙂 It’s true, one of the best hangover remedies!!!

    PS You would never boil kefir, would you? We have kefir in Finland but I am embarrassed to admit that I may have not tasted it for over 20 yrs 😦 Wait, now that I am thinking, I think there are some rather traditional hot dishes made of kefir. Google search, here I come!
