Our week of being vegetarian was a success, I absolutely fell in love with the veggie burgers that Rob made, so we made it twice in one week! I could eat them every day, they were so delicious. Without our vegetarian week we would have never gotten a taste of them.
Let´s continue with Thursday – this was the day I tasted veggie burgers the first time in my life. Rob made an awesome avocado/mayonnaise sauce for it! Divine!
Recipe for black been veggie burgers
1 (16 ounce) can black beans, drained and rinsed
1/2 onion
3 cloves garlic, peeled
1 egg
1/2 cup bread crumbs
Rob pretty much followed this recipe, he fried the onions and garlic before putting them in with the beans. He also added some Estonian spices.
Friday we didn´t make anything special, just put together a nice easy meal – asparagus, pearl potatoes, mushrooms and chicken veggie tenders or as we call it – the “fake” chicken 🙂 Saturday night is always tricky because it´s either eating out or eating junk food 🙂 So we didn´t have a proper meal on that night, we had popcorn, chips and dip, because we had a movie night! 😉
But we had an awesome breakfast next morning – I made peaches and cream crepes!Yummy!
Like I mentioned earlier, we really liked the veggie burgers, so Rob got to make them again on Sunday night! Rob made a different dressing this time, he used mayonnaise, mustard and dill pickles. That was very good!
We ended our successful week with a Mascarpone Cheesecake.
So this was our first ever vegetarian week. We learned that we don´t need to add meat to our food to make it better! We probably won´t eat as much meat as we used to.
