A week of being vegetarian – Part 1

Lately there has been a lot of articles/ads on the web and in magazines about being a vegetarian or vegan.  A lot of our friends and family have also talked a lot about it, and Rob’s sister is vegan.

We love our meat!  Well, we thought we would try it out for a week, just to get the feel how it is to cook and eat when you give up meat!  When we did groceries this week, we didn’t buy any meat!  The idea was to cook things we haven’t cooked before!vegetarian-1After doing some research, we decided on going “Lacto-ovo vegetarian” (a.k.a. Vegetarian Light)  – a diet that excludes meat, fish, and poultry but includes dairy products and eggs. Cheese, ice cream, yogurt, milk, and eggs, as well as foods made with these ingredients are allowed. Most vegetarians in the U.S. ,  Canada, and Western Europe fall into this category.

We are going to post only our dinners, otherwise this post will be very long, but we also had vegetarian lunches! No cheating allowed. It wasn’t needed.  There is so much you can do without meat and it’s delicious.

I saw an interesting recipe in Chatelaine the other day and I teared out the page – Tofu egg-noodle laksa.  I replaced coconut milk with evaporated milk (I researched it and that’s what Jamie Oliver forum suggested) and instead of curry paste I used powder. So that is what we had on Monday night.

vegetarian-2Maiu comments: It tasted very interesting, I don’t usually don’t use curry in my cooking but maybe I should start now! There is an idea in my head that I would want to make Indian Butter chicken in the near future! I would not make that soup very often, there are better soups and meals that I can make than this. Not my favourite! No offense to anyone who is a big fan of this soup!

Rob comments: It was good.  I added more curry to mine, and it was great once I did.

We bought Portabello mushrooms and I planned on doing stuffed mushrooms based on a recipe that I found online! BUT then I thought I will do something original and just stuff it with the stuff I love and know.  I washed the mushrooms, added a bit garlic on them and mozzarella cheese and put them in the oven for 12 minutes.vegetarian-4Then placed them on the bed of spinach and stuffed them with olives and avocado-spinach paste. Topped it with alfalfa sprouts and shredded mozzarella. vegetarian-3Maiu comments: AMAZING!!! I thought I will only have one but it was so good, I had to go and get another one. That just speaks for itself!

Rob comments: These were DELISH!!  Incredibly filling.  I was shocked.

For tonight we made Spinach-Broccoli pasta with Alfredo sauce.

Maiu comments: I love pasta. Whatever shape, whatever sauce. I love it! My favourite shape is Penne (Medium length tubes with ridges, cut diagonally at both ends) and I really like linguine (flattened spaghetti).

Rob comments:  I make a mean alfredo sauce.  You can never go wrong with pasta/alfredo/anything else.  Enough said.
